In August, the Okanagan community of Summerland experienced devastating wildfires. More than 10,000 residents in the area were impacted by the Bald Range fire.

“People lost their homes and their businesses, and so many others were affected,” says dhef Ned Bell, who has a lengthy history in the surrounding area. “The vital summer tourist season came to an abrupt and unexpected end that weekend, and families up and down the valley were significantly disrupted in so many ways.”

To help out in some way, he started the Sauce Project with farmer Thomas Tumbach to purchase and put to use locally grown produce and fruits at a time when many restaurants and roadside stands were forced to close. To date, the project has raised more than $22,000 and has sold out of its sauces and preserves.

For this week’s recipe, Bell whipped up a fresh sauce inspired by the Sauce Project’s creations, made using local produce that you can purchase from your own area’s growers.

“This isn’t so much a recipe as it is an inspiration from the farms and gardens that burst with local and seasonal flavour at different times of the year,” says Bell.

The versatile sauce, which features tomatoes, eggplant, zucchini, peppers and basil, is a “sauce of many possibilities,” according to Bell. It can be used as a dip, pasta sauce, soup and more.
